I plan to install sound diminishing to the underside of the floor of the albin 40 Trawler over the engines. Also install sound absorbing anywhere in the engine room that will make sense.

Anyone else do something like this??

Yes. Many here have used Soundown material. I used it and had good success.

There is a member here, KeysDisease I think, who works there and can possibly help out.

Do not forget that in addition to the sound barrier you are considering, sound gets into the cabin via a lot of holes small and large. So figure out a way to plug them up. There is a product electricians use which is like heavy putty and is found in Home Depot and which you can used to effectively plug openings around things like water hoses coming up through the deck from engine rooms. It is called Duct Seal https://www.amazon.com/dp/B003MZK122?tag=duckduckgo-d-20&linkCode=osi&th=1&psc=1

We have used Soundown in several of our boats with good success.
