Looking for a sailing dinghy, recommendations??

While I love power boating, I miss sailing. I am fortunate to have a larger yacht with two davits. I put my heavy rib on the bow and a light inflatable on top of the sun deck. When we anchor at different islands, we can race around with the 12' Caribe and when I need to take the dogs to the beach, I row ashore and ground the Achilles 10' inflatable. So now I'd like to add a small sailing vessel to the menagerie. One that can handle two persons, have oars, centerboard, and be light enough to break down and stack on the inflatable while underway. I think a Sabot is not what I want. Any other options I should consider??

I think the PT-11 would meet 100% of your requirements; but you have to build it yourself or find one. PT Eleven Nesting Dinghy home page

I had a Trinka 10 that I just sold which would work a treat if you don't need it to nest. It rows really really well and is perfect for two. I only sold it because we're five... plus a greyhound.
