When thinking about how you could do this on your boat, consider that most projectors have the option to reverse the image, so that you can project it from behind the screen, rather than in front of it. And any plain white sheet makes a great screen for doing that.

For three Halloweens in a row, we hung a sheet in our garage door opening and projected the movie from inside the garage, with chairs set up in the driveway. Creature from the Black Lagoon, Harry Potter, and a collection of all the Scooby Doo cartoons, in case you're wondering.
