A quick scan for sunlight-readable tablets led me to this:
Sunlight Readable Tablet
I'm wondering if something like this could be used instead of a MFD. You could buy two of these for the price of a 10" touch screen MFD.
There are only 2 USB ports, but there is also an Ethernet port so if you had everything on a NMEA network that might be all you need. Unfortunately it doesn't say it has GPS built-in, but that's easy to fix with a USB GPS puck.
In theory, with electronic charts and software, GPS, and any other NMEA data that you can put on the network, you could hobble together a pretty good MFD, with the possible exception of radar. I seem to recall hearing something about Ethernet-based radar but I don't know if it's readily available yet.
