Organizing the space under stairs

My 1980's vintage trawler has several set of wooden stairs where the tread is hinged and lifts. The space in the stair is used for storage. The space on the lower stairs goes quite far back.
Does anyone have any tips on organizing this space? clever ways to access or arrange the items stored? What should be stored where? Etc?

In it were me, if the stairs are movable, I would have a shelf that slides forward to access the stuff in the back. There very common now on below counter kitchen cabinets.
