Welcome aboard. Good choice on the Saniflex hose and ME head. Both are excellent IMO.

The engine work can be daunting. Usually the valve covers leak because they have been over tightened. Get new gaskets from American Diesel. 804-435-3107. Brian is the guru on Lehmans. It isn’t too terrible to adjust the valves but it is somewhat involved the first time. He may know of a mechanic in your neighborhood.
