The turbos on my cat Motors are water cooled. 8 knots is approximately 4 gallons per hour

Our OA 456 with twin Cummins 330s Burns about five gallons an hour going 9 knots at 1600 rpms. It takes twice as much fuel to go the extra 1 mph.

On our Cummins 330 hp 6BTA it is through operator discipline that keeps our fuel costs low. It is hard to keep the throttle at 1200 RPM. But that is where economy lives. Boat SOG is 7.3 knots. If I increase to 1600 RPM the boat speed increases to 8 knots. But then I have almost DOUBLED my fuel consumption.

When I was running a 6BTA I had zero boost at 1200 rpm. EGT was pretty low as was noise level because the raw water pump was filling the exhaust.
I started to get some boost at about 1600 rpm.
At 1900 I had 10-14 psi boost. At 2630 (my WOT) I had 30 psi boost and EGT was just at the Cummins recommended max, I think that was about 850-900 F.
