I use a full-on 20 pint house dehumidifier. It’s drain hose is directed into the galley sink. Far better than those calcium chloride “dries airs”. We run it September-March in my area in the PNW. The most critical months are Sept- November, but a Pineapple Express after cold weather can damp down the boat.
 
Hopcar, you're the one who introduced me to the Peltier Effect devices. I bought an Eva-Dry on your recommendation and it has never failed me. I just drilled and suspend a 1/4" hose into my sink when needed while away from the boat in the slip in winter.

For me on our last 50' boat, a dehumidifier running all winter sitting on the kitchen counter and draining to the sink, plus the Defender/WM fan circulator/heaters located in all stale air spaces (all heads, all cabins, engine room) worked great. I am moving up to a larger boat and am intrigued as to whether this will work equally well with 4x cabins and 3x heads. We shall see.
