Anyone have any recommendations on products to put shine on the gelcoat and the interior teak/wood? The interior wood already has a polyurethane finish but it is now dull.

Minwax Teak Oil looks a lot like varnish, and leaves a bright shine. Try it on a teak drawer, e.g., out of the way, and see if you like it. Good for the galley, as it's easy to wipe down.
 
Personally I don't like a gloss finish on the interior of most boats.

But if that is what you want and the wood already has a poly finish on it, I'd just lightly sand it and put a gloss poly on it.

Waxing or oiling really doesn't work very well on a poly finish in many cases. Those products just tend to lay or pool up on top of the finish. As the poly has sealed the wood so they can't soak in.
