So, those "posts" are a continuation of the ribs, all the way up from the keel?

Shouldn't be. The visible "posts" are called stanchions. They are short lengths of timber installed between the (much more closely spaced) frames, and are intended to be sacrificial. They can rot away or be broken off without damaging the basic hull.

Dunno about cow piss, but it reminds me of a journalist once asking " Do they still hold a cat over each bottle of NZ Sauvignon Blanc to piss just before capping the bottle, or has the process been automated?"
