I think what you're looking for is a thin plastic panel, not really "Formica". Check a Home Depot/Lowes in the building materials by the wooden paneling and plywood. Home Depot SKU#179646.

I did my decks and fly bridge with light gray Kiwi Grip last fall. Very easy and am pleased with the results. No need to sand/grind the existing non-skid, just wire brush any loose patches...
