Unhappy Ford Operational Temperature

Hi, I am running a couple of 4 cylinder Ford Dovers, can you please comment on the optimum loaded running temperature at say 2000rpm.
I am currently running at about 178/180F on both, according to gauges) which for years I have understood to be correct however just read else where they should be working at 200F

Maybe I should have posted that my ford is a Leman conversion, the Dover is the ford model 2700E

The Lehman "Operators Manual" covering the 80hp 4cyl 245cu/4150cc engine, designated 2712E, gives temp specs (same for the 6cyl normally aspirated and turbo engines) : range 175-195f/79-88C, optimum 195f/90C.
Note: 1. this is a different Lehman model reference to the one you quote and may be inapplicable.
2. I`m left wondering why the "optimum" is higher than the quoted temp range.
