I leave the AC and engine seacocks open but close the one supplying the head.

When I close the seacock to the main engine, I rubber band the engine key to the lever so I can't forget to open it back up.

I do the same thing. We'll close the raw water intake to the main, aux and generator when we're leaving the boat and the keys go on the handle to the valve of one of them.

All closed if not on board for a week or longer. Main DC switch keys for engine / gen starter at seacock handle to avoid start with closed valves. AC closed all the year, never needed here ...

It is a mater of double edged sward. You leave them open maybe you sink a boat. You close them and forget to open maybe you lose a motor. I have seen it go both ways.
