if you remove the 18% water from honey you have sugar crystals not honey.

Glory Bee still sells aunt patty's organic HONEY crystals, at least they did the last time i looked at their website.

What's it like when it's rehydrated? Does the food return to its original texture and taste?
some foods come close but you can still taste that they are not fresh. The thing is if you do things like zuccini etc. sliced thin then spiced and dried they make a great tasting snack just as they are. Be inventive and you will be amaxed at the tasty fgoods you can make. Most all veggies berries fruits can be dried and they last a long time unless they get wet
